EGGPLANT RECIPE
Add olive oil, garlic and onion to a sauce pan, and saute for two minutes.
Add in chopped/ diced eggplant, salt and pepper.
Cook until eggplant has completely softened.
If blending, cool the eggplant down some, then add it into a blender with a clove of fresh garlic, and a piece of fresh onion.
Blend & Enjoy!
